[Ingredients]
1kg tiger prawns, peeled and deveined
1 can lychee beer
Oil for deep frying
200g potato starch
1tsp salt
1tsp pepper
Chopped scallions
Lychees - garnish
[Sauce]
100g mayonnaise
150g lychees
[Steps]
In a bowl, add in prawns and lychee beer. Marinate for 1hr.
Sauce: Add ingredients into a food processor and blend for 10secs. Set aside.
In a bowl, add in starch, salt and pepper, mix well.
Drain prawns and pat dry using paper towels.
Coat prawns with starch mixture and deep fry till golden brown.
Add fried prawns into lychee mayonnaise, add in scallions and mix well.
Serve prawns with lychees.
