Honey Glazed Char Siew 蜜汁叉燒


[Ingredients]

  • 1kg pork collar

  • 2tbsp hoisin sauce

  • 2tbsp honey

  • 2tbsp light soy sauce

  • 1tsp dark soy sauce

  • 1tbsp Shao Xing Jiu

  • 1tsp sesame oil

  • 1/2tsp white pepper

  • 2tbsp sugar

  • 150ml water

[Steps]

  1. Add all ingredients into a large bowl. Mix well and chill covered to marinate for at least 6hrs or overnight.

  2. Place pork into a wok and pour marinade over. Bring to a simmer and cook covered on medium heat for 20-30mins. Turn pork every 10mins.

  3. Cook till pork till tender and sauce has caramelised and thicken.

  4. Place pork on a wire rack set over a deep dish / baking tray. Grill for 4-5mins on each side in the oven at 250degC, until the edges are charred.

  5. Allow pork to rest on wire rack for 10mins, then cut into slices.
