[Ingredients]
1kg pork collar
2tbsp hoisin sauce
2tbsp honey
2tbsp light soy sauce
1tsp dark soy sauce
1tbsp Shao Xing Jiu
1tsp sesame oil
1/2tsp white pepper
2tbsp sugar
150ml water
[Steps]
Add all ingredients into a large bowl. Mix well and chill covered to marinate for at least 6hrs or overnight.
Place pork into a wok and pour marinade over. Bring to a simmer and cook covered on medium heat for 20-30mins. Turn pork every 10mins.
Cook till pork till tender and sauce has caramelised and thicken.
Place pork on a wire rack set over a deep dish / baking tray. Grill for 4-5mins on each side in the oven at 250degC, until the edges are charred.
Allow pork to rest on wire rack for 10mins, then cut into slices.
