Fried Shrimp Puffs


[Ingredients]

  • 12-16pcs taupok (fried beancurd)

  • 400g prawns, shelled

  • 3tsp potato starch

  • 1/4tsp salt

  • Dash of pepper

  • 1/2tsp chicken powder

  • 2tsp Shao Xing Jiu

  • 1tsp sesame oil

  • 3tbsp chopped scallions

  • Oil for deep frying

  • Sambal chilli

[Steps]

  1. Cut a slit in the middle of the tau poks.

  2. Dice 200g of prawns and chopped 200g of prawns.

  3. In a bowl, add in chopped prawns, starch, salt, pepper, chicken powder, Shao Xing Jiu and sesame oil. Mix well, then scoop and throw mixture from a height back into the bowl a few times to create texture.

  4. Add prawn mixture to diced prawns. Add in scallions and mix well.

  5. Spoon mixture into tau pok and fry till golden brown.

  6. Serve with sambal chilli.
