[Ingredients]
300g black glutinous rice, soaked overnight
200g rock sugar
2L water
2 pandan leaves, tie into a knot
100g dried longan
1/8tsp salt
Topping: 200ml coconut cream + 1/4tsp salt
[Steps]
In a pot, add in drained rice, rock sugar, water, and pandan leaves. Simmer for 1hr, stirring occasionally.
In another pot, add in coconut cream and salt, mix well and bring to a simmer. Remove from heat and set aside.
Add dried longans to rice and stir well. Let simmer for 10mins.
Add in salt, mix well. Turn off heat and let rest covered for 30secs.
Serve topped with coconut sauce.
