Beef Hor Fun 牛肉河粉


[Hor Fun]

  • 400g hor fun noodles

  • 1tsp dark soy sauce

  • 1tbsp sesame oil

  • 6tbsp olive oil

[Beef]

  • 250g beef, thinly sliced

  • 1tbsp sesame oil

  • 1tbsp Hua Diao Jiu

  • 1/2tsp white pepper powder

  • 1/2tsp salt

  • 2tbsp cornstarch

  • 1 egg white

[Gravy]

  • 500ml beef stock

  • 1tbsp oyster sauce

  • 1tbsp Hua Diao Jiu

  • 1tsp sugar

  • 1/2tsp white pepper powder

  • 1tbsp minced garlic

  • 1-2tbsp black bean paste

  • 1tbsp XO sauce

  • 5 stalks Chye Sim, cut into 5cm length

  • 3tbsp cornstarch + 3tbsp water

[Steps]

  1. Beef: In a bowl, add in all ingredients except for starch. Mix well and marinate for at least 20mins.

  2. Hor Fun: In a bowl, add in hor fun, dark soy sauce and sesame oil, mix well.

  3. In a heated pan with 3tbsp olive oil on medium-high heat, add in hor fun and stir-fry to slightly charred. Transfer to serving dish.

  4. Add starch to beef and mix well.

  5. Clean pan. Heat pan with 3tbsp olive oil and sear beef till 60% cooked. Set aside.

  6. Gravy: Using the same pan, add in garlic and stir-fry till fragrant.

  7. Followed by XO sauce and black bean paste, stir-fry till fragrant.

  8. Add in Hua Diao Jiu, stock, oyster sauce, pepper and sugar. Mix well and bring to a boil.

  9. Add in chye sim and when it's cooked, add in cornstarch solution. Stir until sauce thickens.

  10. Add in beef and mix well. Pour over hor fun.
