Spicy Mayo Poke Bowl

[Ingredients]
- Cooked sushi rice 
- 500g salmon sashimi, cut into bite-sized cubes 
- 3 stalks scallions, chopped 
- 2 avocadoes, cut into bite-sized cubes 
- Roasted white sesame seeds 
- Roasted black sesame seeds 
- Chopped seaweed flakes 
- Lemon 
[Spicy Mayo Sauce]
- 2tbsp Japanese mayonnaise 
- 1tbsp Sriracha sauce 
- 1/2tbsp sambal 
- 1 & 1/2tbsp light soy sauce 
- Dash of Togarashi powder 
[Steps]
- Mix spicy mayo sauce ingredients together. 
- Add in salmon cubes and some scallions, mix well and chill for 10mins. 
- Spoon salmon over a bowl of rice. Add on avocado and sprinkle on seaweed, white and black sesame seeds. 
- Grate lemon zest over salmon and add on extra scallions.
