[Ingredients]
1kg chicken drumstick
Cooking oil for deep frying
1tbsp turmeric powder
1tsp salt
2 onions, peeled and sliced
1/2 cup cashew nuts
1 cup thick coconut milk
1tbsp finely sliced Kaffir lime leaves
1tbsp gula melaka
1tbsp tamarind paste
2tbsp water
[Spice Paste]
350g shallots
10g garlic
20g ginger
20g galangal
10g turmeric
10g candelnut
200g red chilli
20g toasted belacan
50g lemongrass
2tbsp fried shallot
[Roti Jala]
250g plain flour
3 large eggs (180g)
1 cup coconut milk
2 cups water
1/4 cup vegetable oil
1tsp salt
1/2tsp turmeric powder
[Steps]
Place chicken in a large bowl. Add in turmeric powder and salt. Mix well and let marinate covered for 4hrs.
In a food processor, add in all spice paste ingredients and blend into a smooth paste.
Deep fry chicken for 3-4mins till golden brown. Drain on paper towels and set aside.
Keep aside 1/2 cup of frying oil.
Add spice paste into a heated pan and stir-fry till fragrant. Add in frying oil and mix well.
Followed by cashew nuts and onions, cook till onions are translucent.
Add 2tbsp of water to tamarind paste and mix well. Then drain into the pan.
Add in chicken, coconut milk, gula elaka and lime leaves. Mix well and simmer covered for 1hr.
Place Roti Jala ingredients into a blender and blend till smooth. Strain batter.
Heat up a flat pan with oil and prepare Roti Jala.
Serve Roti Jala with Kapitan Chicken.
