[Ingredients]
2 boneless chicken thigh
500ml chicken stock
1 cup Hua Diao Jiu
1/4 cup fish sauce
2tbsp sugar
1tsp salt
2tbsp Goji berries
10g dang shen
10g ginger, sliced
3 cloves garlic, peeled
Chinese cucumber slices - garnish
[Steps]
Sprinkle salt on skin side of chicken and roll it up and wrap in foil.
Steam for 15mins.
In a pot, add in stock, ginger, garlic, dang shen, Goji berries and sugar. Mix well and bring to a boil.
Remove from heat and add in fish sauce and Hua Diao Jiu. Mix well.
When chicken is done, soak them in ice bath for 10mins.
Place chicken in a container (deep enough to keep chicken soaked in the marinade) and pour marinade over. Chill covered overnight.
Slice chicken into serving pieces. Plate them with chicken and pour marinade over.
