Oreo Crepe Cake

[Ingredients]
4 eggs
40g sugar
Pinch of salt
200g cake flour
1tsp black cocoa powder (extra dark cocoa powder / charcoal powder works too)
1tbsp crushed oreo
500ml milk
70g unsalted butter, melted
[Filling]
Soft whipped cream - 400ml whipping cream, 30g sugar
110g white chocolate, melted
1/2tbsp crushed oreo
[Others]
Chocolate ganache - 70g chocolate, 35g whipping cream
Crushed oreo
Whole oreos
[Steps]
Crepe: In a mixing bowl, add in eggs and whisk well.
Add in sugar and salt, mix well.
Sift in cake flour and cocoa powder, fold it in. Followed by milk.
Add in oreo and mix well, and lastly butter.
Strain mixture.
Heat a non-stick pan and add a 1/4 cup of batter into the center of pan. Cook till both sides are browned. Continue till batter is all used up. Allow sheets to cool.
Stack a few sheets of crepe together. Place a 6inch cake ring over and cut through. Remove excess pieces. Repeat for remaining crepe pieces.
Filling: Whisk cream and chocolate together. Add in oreo and mix well.
On a serving tray / cake board, place a sheet of crepe. Spread a thin layer of cream. Place another sheet of crepe over, and repeat the steps.
At every 3rd sheet, sprinkle a layer of crushed oreo, about 1tbsp.
When done, cover the whole cake in cream.
Spread ganache over the top and let it drip over the edges.
Transfer remaining cream into a pastry bag fitted with a star tip.
Pipe cream on top of cake and decorate with oreo pieces.
