[Ingredients]
1 cup anko paste*
2 cups boiling water
Few pieces of white dango
[Anko Paste]
2 cups adzuki beans
2 cups sugar
2 1/2tsp salt
[Steps]
Anko Paste: place the beans in a large pot with enough water to cover the beans. Bring to boil over medium heat.
After the water comes to a boil, carefully drain the beans and cook the beans on low heat for about 1hr until they are soft enough to be crushed with your fingers.
Using a spatula or wooden spoon, mash the beans into a paste. How smooth it would be is up to you!
Add half the sugar to the paste and warm over low heat. Stir until the paste starts to thicken.
Stir in the other half of the sugar and continue to cook.
Stir in salt and cook the paste until it reaches the consistency of sticky mashed potatoes.
Place anko paste in a bowl and add in boiling water.
Stir until the paste is soupy. Add in dango and serve hot.
