Samsui Chicken

[Ingredients]

  • 1 large chicken

  • 50g old ginger - sliced

  • 5 stalks scallion

  • 1L chicken stock

  • 2tbsp salt

  • 1 cucumber - sliced

[Ginger Sauce]

  • 30g old ginger

  • 80g young ginger

  • 3 cloves garlic

  • 1tbsp hua diao jiu

  • 1tbsp light soy sauce

  • 50ml sesame oil

  • 30ml chicken oil

  • 2tbsp sugar

  • 1tbsp chicken stock powder

[Steps]

  1. Add 1L of chicken stock to a pot of boiling water. Add salt and bring to a boil.

  2. Add in ginger, scallion and chicken. Bring to boil and let simmer for 10mins.

  3. Turn off heat and let rest covered for 45mins.

  4. Sauce: Add old ginger, young ginger, garlic, hua diao jiu and light soy sauce in a blender. Blend until smooth.

  5. Transfer ginger paste into a small bowl.

  6. Heat sesame oil and chicken oil together in a pan. Once the oil starts to smoke, add to ginger paste. Mix well, then mix in sugar and chicken stock powder.

  7. Line serving dish with cucumber slices as shown.

  8. Remove chicken from pot and soak in ice bath. Slice into serving pieces.

  9. Place chicken pieces on prepared serving dish and serve with prepared ginger sauce.
