[Ingredients]
1kg oxtail
2 carrots - sliced into chunks
2 stalks of celery - sliced 1 inch thick
1/2 yellow onion - peeled, sliced
2tbsp olive oil
1/2 bottle red wine
1tbsp dried thyme
3 bay leaves
2tbsp worcestershire
1L beef/chicken stock
Salt and pepper
Chopped scallion/cilantro
[Steps]
Add oil in a frying pan, add in oxtail.
Season with salt and pepper. Sear oxtail on both sides, then side aside.
Add carrots, onion and celery to the same pan. Season with salt and pepper.
Add wine and reduce. Transfer to pressure cooker.
Add in thyme, bay leaves, oxtail, stock, worcestershire and salt. Cook for 45mins.
Serve garnished with scallion or cilantro.
