[Ingredients]
1 cucumber
1 jicama - peeled
1 green apple
1 green Thai mango - peeled
1 pineapple - peeled
4 pieces of doughstick
2 pieces of taupok
Toasted ground peanut
Poached bean sprouts
[Rojak Sauce]
3tbsp prawn paste
2tbsp tamarind paste + 3tbsp hot water
4tbsp sugar
1tbsp minced chilli
1 calamansi
1 ginger flower
[Steps]
Toast doughstick and taupok in the oven till crispy.
Add prawn paste into a large mixing bowl. Add in 2tbsp tamarind mix, mix well.
Add in chilli, few slices of calamansi zest and a few shavings of ginger flower, mix well.
Add in sugar and mix well. Add in 10 slices of cucumber, 10 slices of jicama, 10 slices of apple, 6 slices of mango and 10 slices of pineapple, mix well.
Followed by a handful of bean sprouts, 2 doughsticks and 1 taupok, mix well.
Mix in 2tbsp of peanuts and transfer to a serving dish. Topped with more peanuts.
