Herbal Emperor Chicken


[Ingredients]

  • 1 whole chicken

  • 500ml water

  • Salt and pepper

  • 24g huai shan 淮山

  • 18g dang shen 党参

  • 16g yu zhu 玉竹

  • 22g dried longan 龙眼干

  • 10g goji berries 枸杞子

  • 6 red dates 红枣

  • 3g chuang gong 川芎

  • 5g tang gui 当归

  • 15g bei qi 北芪

[Steps]

  1. Place herbs and water in a shallow dish and steam for 5mins.

  2. On a large sheet of aluminium foil, place a sheet of parchment paper over. Sit chicken in the centre.

  3. Season cavity with salt and pepper. Stuff half the herbs inside, then the legs.

  4. Spread the rest of the herbs around the chicken and season chicken with salt and pepper all over.

  5. Fold up the edges of the foil and pour the herb-water in. Wrap and seal the foil.

  6. Steam chicken for 2hrs.

  7. Open foil and serve.
