[Ingredients]
75g plain flour
3 eggs - lightly beaten
250g quinoa flakes
1kg chicken wings - halved at the joint
Oil for deep-frying
75g mayonnaise
1/2tbsp dijon mustard
2tbsp finely chopped chives
1/2tsp cayenne pepper
[Steps]
Place flour, eggs and quinoa in three seperate dishes.
Coat chicken first in flour, followed by eggs and then quinoa.
Heat oil to 160degC and deep-fry chicken in 2 batches for 6-8mins or until golden brown and cooked thru. Drain on paper towels.
While chicken is cooking, mix mayo and mustard together.
Sprinkle chicken with chives and cayenne, and serve with prepared dip.
