[Ingredients]
4 cloves of garlic - chopped
3 shallots - sliced
4 chilli padi
2tbsp cooking oil
200g minced chicken thigh
1 1/2tbsp fish sauce
1tbsp sweet soy sauce
Pepper
1tsp sugar
20g sweet basil leaves
[Steps]
Slice chilli padi and pound in a stone mortar.
Pluck leaves and roughly slice them into smaller pieces.
Heat and oil a frying pan. Add in garlic and shallots, followed by chicken, breaking them up.
Add in chilli padi, fish sauce, soy sauce, sugar, pepper, and mix well, followed by basil leaves. Cook till leaves are done, about 15secs.
Serve with steamed rice and a fried egg.
