Mustard Marmalade Pork Chop


[Ingredients]

  • 170g marmalade

  • 2tbsp Dijon mustard

  • 1tbsp malt vinegar

  • 2tbsp brown sugar

  • Sea salt and cracked black pepper

  • 4 x 180g pork chops - trimmed

  • 1tbsp extra virgin olive oil

  • 6 sprigs of lemon thyme

[Steps]

  1. Place marmalade, mustard, vinegar, sugar, salt and pepper in a bowl, mix well.

  2. Sprinkle pork with salt and pepper.

  3. Heat oil in a large frying pan over high heat. Add in pork and cook for 3mins.

  4. Turn pork and add in marmalade mixture and thyme. Cook for 4mins or until golden and caramelised. Serve immediately.
