Recipes to My Seoul Trip


Hi, I have just returned from my Korea trip and this post is about the meals I prepared during my stay in Seoul. I try not to eat out for every meal as it can be quite costly. I am not really a fussy eater and to be honest, not really a Korean food fan as well. Thus, I only visit the popular cafes and restaurants, and snack on the famous Korean street food. I aim for simple and quick meals so I do not have to spend a lot of time preparing them. Based on individual preference, I prefer western-style meals like pasta, sandwiches and pancakes.

Without further ado, here are my self-created meals during my 9-day trip:

Pancakes with Spam, Sauteed Spinach and Bacon

Pancake mix for 1 serving

Spam slices

Spinach (leaves only) 1 serving

3-4 streaky bacon

Salt and pepper

Cooking oil

  1. Prepare pancake batter as instructed. Lightly oil pan and cook pancake till browned on both sides.

  2. Without additional oil. cook bacon till crispy. (Bacon on its own releases oil, so there is no need to add in cooking oil.)

  3. Using bacon oil, pan-fry spam slices till browned on both sides.

  4. Add in more oil if needed. Saute spinach till soft. Season with salt and pepper.

Toast, Scrambled Eggs, Sausage and Bacon

2 sausages of your choice - in this case black rice sausage

1 slice of white bread

2 eggs - beat well + 1tbsp of sugar

3-4 streaky bacon

Cooking oil

  1. Lightly oil pan and toast bread till browned on both sides.

  2. Cook eggs scrambled.

  3. Without additional oil. cook bacon till crispy. (Bacon on its own releases oil, so there is no need to add in cooking oil.)

  4. Using bacon oil, pan-fry sausages till browned on all sides.

Bacon, Corn and Mushroom Carbonara

1pkt single serving carbonara sauce (with mushroom in it)

2-3 streaky bacon - sliced

1 serving of canned corn kernels - drained

1 serving of pasta

Grated parmesan

Salt and pepper

  1. Boil pasta in lightly salted water till al dente.

  2. Without adding oil. cook bacon till crispy. (Bacon on its own releases oil, so there is no need to add in cooking oil.)

  3. Add in corn, followed by pasta sauce. Adjust seasoning.

  4. Drain and toss pasta in and served sprinkled with parmesan.

Toast, Sunny Side Up, Sausage and Ham

1 slice of white bread

2 eggs

2 sausages of your choice - in this case vegetables sausage

3 slices of ham

Pepper

  1. Lightly oil pan and cook bread till browned on both sides.

  2. Cook ham and sausages till browned on all sides.

  3. Carefully crack eggs into pan, not to break the yolk, and cook till egg whites have settled. Sprinkle some pepper over.

Ham Omelette Cream Cheese Sandwich

3 slices of white bread

Cream cheese (spreadable)

2 slices of ham - diced

2 eggs

Salt and pepper

  1. Beat eggs, add in ham, salt and pepper. Cook omelette style. Slice omelette into two portions.

  2. Spread cream cheese onto bread. Assemble sandwich and slice diagonally to get two triangles.

Mixed Sausage Arrabbiata

1pkt single serving arrabbiata sauce

1 serving of pasta

2 sausages of your choice - sliced, in this case kimchi sausage and vegetables sausage

Salt and pepper

Dried parsley

Grated parmesan

  1. Cook pasta in lightly salted water till al dente.

  2. Lightly oil pan and cook sausages till cooked thru.

  3. Add in pasta sauce and adjust seasoning, followed by a sprinkle of parsley.

  4. Drain and toss pasta in and serve sprinkled with some parsley and parmesan.

Spam and Potato Korean Curry Pasta

1pkt single serving Korean curry (with potato in it)

1 serving of spam - cubed

1 serving of pasta

Salt and pepper

Dried parsley flakes

Grated parmesan

  1. Cook pasta in lightly salted water till al dente.

  2. Lightly oil pan and cook spam cubes till cooked thru.

  3. Add in curry sauce and adjust seasoning, followed by a sprinkle of parsley.

  4. Drain and toss pasta in and serve sprinkled with parsley and parmesan.

Pancakes with Ham and Corn Salad

Pancake mix for 1 serving

Handful of corn kernels - drained

2 slices of ham - sliced

Salt and pepper

Grated parmesan

Cream cheese

Korean mayonnaise

  1. Place corn, ham, mayonnaise, cream cheese and parmesan in a bowl and mix well. Adjust seasoning. Chill till required.

  2. Prepare pancake batter and cook as instructed.

Sausage and Spam Pasta Salad

1 serving of pasta

1 serving of spam - cubed

1 sausage of your choice - cubed, in this case 1/2 curry sausage and 1/2 vegetables sausage.

Korean mayonnaise

Cream cheese

Grated parmesan

Salt and pepper

Dried parsley flakes

  1. Cook pasta in lightly salted water till al dente.

  2. Drain and cut pasta into an inch pieces.

  3. Lightly oil pan and cook spam and sausages till cooked thru.

  4. Place pasta, spam, sausages, mayonnaise, cream cheese, parmesan and parsley in a bowl and mix well. Adjust seasoning.

  5. Chill overnight.

Mixed Sausage Tomato Cream Pasta

1 serving of pasta

2 sausages of your choice - sliced, in this case curry sausage and vegetables sausage

Tomato ketchup

Cream cheese

Sugar, salt and pepper

Dried parsley flakes

Grated parmesan

  1. Cook pasta in lightly salted water till al dente.

  2. Lightly oil pan and cook sausages till cooked thru.

  3. Add in tomato ketchup and some water, and stir well to make a sauce.

  4. Followed by a dollop of cream cheese, parmesan and parsley. Adjust seasoning.

  5. Drain and toss pasta in, serve sprinkled with parsley and parmesan.
