Sesame Balls


[Ingredients]

  • 300g sweet potato

  • 150g glutinous rice flour (sifted)

  • 30g sugar

  • 300g red bean paste

  • 1 cup white sesame seeds

[Steps]

  1. Peel sweet potato and cut into thin slices. Steam over high heat for about 20mins till cooked. Mash well while it's hot. Quickly mix in the glutinous rice flour and sugar. Leave to cool slightly, then knead into a dough. Divide into 20 equal portions.

  2. Divide red bean paste into 20 equal portions.

  3. Fill a piece of dough with a portion of red bean paste filling and shape into a ball. Sprinkle with some water, then coat with sesame seeds. Repeat till all ingredients are used up.

  4. Heat oil till about 150 degC (low heat), deep fry sesame balls till golden brown.

TIP: when deep-frying, heat will cause the sesame balls to fill up with air and can burst easily. thus make sure that the oil is not too hot and stir them constantly.
