[Ingredients]
150g butter
100g bread flour + extra for dusting
100g plain flour
4g salt
100g cold/iced water
[Steps]
Place both flours and salt in a large mixing bowl. Cut butter into cubes and add in.
Using fingertips, gently knead butter into flour mixture until mixture resembles breadcrumbs.
Make a well in the center and add in the water. Using a scraper, mix the water in until mixture is well mixed.
Place dough onto worktop and knead until a smooth dough is formed.
Shape dough roughly into a rectangle. Wrap with cling film and let rest chilled for 1hr.
Place dough on a lightly floured worktop and roll it out using a rolling pin. Roll until the length is about 3-4 times longer than the original length.
Fold one third from the bottom to the center and the top one third to the center, forming a three fold.
Turn the dough 90deg and roll it out until the length is about 3-4 times longer than the original length, fold into three fold again.
Wrap it in cling film and chill for 1hr. Repeat 2 times of three fold, chill wrapped for 1hr and repeat three fold for the last 2 times.
