[Starter]
100g sifted plain flour
140ml water
1/2tsp dry yeast
[Batter]
100g sifted plain flour
100g sifted bread flour
1 egg
250ml water
40g sugar
1/4tsp baking powder
1/4tsp alkaline water
[Peanut Filling]
200g roasted peanuts (coarsely ground)
20g sugar
[Coconut Filling]
200g grated white coconut
40g brown sugar (orange colour)
15g margarine
[Steps]
Starter: Combine all ingredients together and mix well. Set aside for 1hr.
Batter: Mix all ingredients and starter together. Set aside for 45mins.
Filling: Combine ingredients together and mix well.
Heat a flat-bottomed frying pan till hot (no oil needed). Slowly pour in 1 to 2tbsp batter and let it spread out into a pancake.
When surface of pancake has set, sprinkle filling over.
Continue to cook till surface of pancake is dry. Fold pancake in half.
