Mee Jian Kueh


[Starter]

  • 100g sifted plain flour

  • 140ml water

  • 1/2tsp dry yeast

[Batter]

  • 100g sifted plain flour

  • 100g sifted bread flour

  • 1 egg

  • 250ml water

  • 40g sugar

  • 1/4tsp baking powder

  • 1/4tsp alkaline water

[Peanut Filling]

  • 200g roasted peanuts (coarsely ground)

  • 20g sugar

[Coconut Filling]

  • 200g grated white coconut

  • 40g brown sugar (orange colour)

  • 15g margarine

[Steps]

  1. Starter: Combine all ingredients together and mix well. Set aside for 1hr.

  2. Batter: Mix all ingredients and starter together. Set aside for 45mins.

  3. Filling: Combine ingredients together and mix well.

  4. Heat a flat-bottomed frying pan till hot (no oil needed). Slowly pour in 1 to 2tbsp batter and let it spread out into a pancake.

  5. When surface of pancake has set, sprinkle filling over.

  6. Continue to cook till surface of pancake is dry. Fold pancake in half.
