[Ingredients]
150g whole almond
45g sugar
20ml water
5g butter
100g dark chocolate
Cocoa powder – for coating
[Steps]
Roast almonds at 150degC until golden brown.
Cook sugar and water in a saucepan until boiled.
Reduce heat to low and add in almonds. Stir till almonds are well coated and sugar turns white.
Sugar will slowly turn brown (caramelize) from white. When sugar has caramelized, remove from heat and stir in butter. Place almonds on a sheet of parchment paper and let cool.
Place chocolate in a heatproof bowl set over a pan of simmering water and stir till melted.
Place almonds back into a bowl and pour melted chocolate over, mix well till chocolate solidifies.
Sift cocoa powder and coat almonds. Sift away excess cocoa powder.
