Waffles


[Ingredients]

  • 250g hulled strawberries

  • 2tbsp brown sugar

  • 2tbsp orange juice

  • 1/2tsp vanilla essence

  • 235g plain flour

  • 2tbsp granulated sugar

  • 8g baking powder

  • 4g baking soda

  • 500ml buttermilk

  • 60ml milk

  • 2 separated large eggs

  • 60g melted butter

[Steps]

  1. Preheat waffle iron. Preheat oven 120degC.

  2. Place strawberries in a blender. Add brown sugar, orange juice and 1/4tsp vanilla. Blend until smooth, set aside.

  3. In a large bowl, mix flour, granulated sugar, baking powder and bicarbonate of soda together.

  4. In another bowl, whisk buttermilk, milk, egg yolks, butter and 1/4tsp vanilla together.

  5. Pour wet mixture into dry mixture and mix well.

  6. In a bowl, beat egg whites using an electric mixer at medium speed until soft peaks form. Fold egg whites into the batter until just combined.

  7. Lightly grease waffle iron and ladle in enough batter for 1 waffle. When done, transfer to baking rack and keep it warm in the oven.

  8. Repeat until all the batter is used up.

  9. Cut waffles into wedges or sticks and serve with strawberry sauce for dipping.
