Mini Burgers

[Ingredients]

  • 2 large sweet potatoes - cut lengthways into sticks

  • 2tbsp olive oil + extra for greasing

  • Salt and pepper

  • 375g ground beef

  • 2 slices cheddar - halved into triangles

  • 4 split dinner rolls

  • Sliced gherkins

  • Ketchup and mustard for serving

[Steps]

  1. Preheat oven 200degC.

  2. Place potatoes on a plate or bowl. Drizzle with olive oil and sprinkle with salt and pepper. Using hands or spatula, toss well.

  3. Spread potato sticks on a baking tray. Bake for 20 to 25mins until golden and crisp. Remove from oven and keep warm.

  4. Divide meat into 4 equal portions. Make into 12mm thick patties.

  5. Brush a frying pan with oil and place over medium high heat. When pan is hot, cook patties until browned on both sides, about 6mins in total.

  6. At final min of cooking, top patties with a slice of cheese.

  7. Place each roll, cut side up on a plate. Place a patty on the bottom half of the roll. Add gherkins, ketchup and mustard. Serve with potato sticks.
