Kueh Dadar


[Filling]

  • 1tbsp glutinuous rice flour

  • 80ml water

  • 80g gula melaka

  • 30g sugar

  • 300g grated coconut

[Skin]

  • 250g plain flour

  • Pandan flavouring

  • Green colouring

  • 1/2 tsp salt

  • 1 egg

  • 1tsp oil

[Steps]

  1. Filling: sift glutinuous rice flour and mix well with 30ml water.

  2. Boil gula melaka and sugar with 50ml water till dissolved. Then add grated coconut and cook till fairly dry. Add glutinuous rice flour mixture and stir well till dry. Divide into 18 portions then leave to cool.

  3. Skin: sift plain flour. Add salt, pandan flavouring and green colouring with 2 cups of water and stir well then add in egg and stir again. When well combined, add flour to mix well and add oil.

  4. Heat up a frying pan with some oil and pour in 2tbsp of batter. Swirl the pan to distribute the batter thinly. Cook over low heat. Remove and leave to cool. Place a portion of filling on each pancake and roll up.

TIP: it is important to use a non-stick pan for cooking the pancake to prevent from sticking.
