[Ingredients]
185g blueberries
180ml maple syrup
2tbsp sugar
1tsp ground cinnamon
2 large eggs
120ml buttermilk
120ml milk
1tsp vanilla essence
Pinch of salt
6 thick slices of country bread - cut into 2.5cm cubes
30g butter
[Steps]
Boil blueberries and maple syrup together over low-medium heat. Keep stirring to prevent scorching. Remove from heat, set aside.
In a large bowl, mix sugar and cinnamon together. Set aside.
In another large bowl, whisk eggs, buttermilk, milk, vanilla and salt together.
Place bread cubes in egg mixture and coat them well using a large spoon. All the mixture should be absorbed.
Melt half the butter over medium heat. Add half the bread and cook until all sides are golden brown, about 5mins.
Transfer bread to sugar bowl and toss well. Repeat with the remaining uncooked bread.
Divide bread into 4 servings and sprinkle remaining sugar mix over. Serve with blueberry sauce for dipping.
