Viennese Cookies


[Ingredients]

  • 115g softened unsalted butter

  • 28g icing sugar

  • 140g plain flour

  • 1/2tsp vanilla essence

  • 115g dark/milk chocolate

[Steps]

  1. Preheat oven 190degC.

  2. Line a baking sheet with parchment paper/aluminum foil.

  3. In a bowl, beat butter and sugar together until smooth and VERY soft.

  4. Stir in flour and vanilla until well combined.

  5. Spoon mixture into a large piping bag fitted with a medium star nozzle and pipe out 16 7.5cm fingers, well spaced apart on the baking tray.

  6. Bake for 10mins until pale golden brown.

  7. Remove from oven and let cool for 5mins. Transfer to cooling rack to cool completely.

  8. Melt chocolate in a bowl set over a pan of simmering water. Dip ends of fingers into the chocolate and transfer to rack to set.

  9. Dust with icing sugar and serve.
