Chocolate Hazelnut Biscotti


[Ingredients]

  • 1 egg

  • 60g sugar

  • 20g chocolate

  • 20g butter

  • 100g cake flour

  • 80g almond powder

  • 10g unsweetened cocoa powder

  • 5g baking powder

  • Pinch of salt

  • 35g whole hazelnut – halved

[Steps]

  1. Place chocolate and butter in a heatproof bowl. Place over a pan of simmering water until melted.

  2. In a large mixing bowl, whisk egg yolk. Whisk in sugar till pale and creamy.

  3. Fold in flour, almond, cocoa powder, baking powder and salt.

  4. Mix in hazelnut. Shape dough into a rectangular log as shown and place on a parchment paper lined baking tray. Bake in a preheated oven of 170-180degC for 25-30mins.

  5. Slice biscotti using a bread knife to a thickness of 1-2cm. Reduce oven temp to 160degC and bake for another 10-15mins.
