[Ingredients]
1 egg
60g sugar
20g chocolate
20g butter
100g cake flour
80g almond powder
10g unsweetened cocoa powder
5g baking powder
Pinch of salt
35g whole hazelnut – halved
[Steps]
Place chocolate and butter in a heatproof bowl. Place over a pan of simmering water until melted.
In a large mixing bowl, whisk egg yolk. Whisk in sugar till pale and creamy.
Fold in flour, almond, cocoa powder, baking powder and salt.
Mix in hazelnut. Shape dough into a rectangular log as shown and place on a parchment paper lined baking tray. Bake in a preheated oven of 170-180degC for 25-30mins.
Slice biscotti using a bread knife to a thickness of 1-2cm. Reduce oven temp to 160degC and bake for another 10-15mins.
