100g softened butter
80g brown sugar
Pinch of salt
1 egg
100g cake flour
75g whole wheat flour
25g almond powder
2g baking soda
1g baking powder
Roasted whole almonds – for decorating
[Steps]
In a large mixing bowl, whisk butter until softened. Whisk in sugar and salt until butter is pale and creamy.
Beat egg and whisk in in 2 additions.
Sift flour, wheat flour, almond, baking soda and baking powder, fold into butter.
Knead mixture into a smooth dough and roll into small balls. Place dough on a parchment paper lined baking tray and place an almond in the center of each dough ball, slightly flattening the dough.
Bake in a preheated oven of 170degC for 20mins until golden brown.
