Almond Cookies


[Ingredients]

  • 100g softened butter

  • 80g brown sugar

  • Pinch of salt

  • 1 egg

  • 100g cake flour

  • 75g whole wheat flour

  • 25g almond powder

  • 2g baking soda

  • 1g baking powder

  • Roasted whole almonds – for decorating

[Steps]

  1. In a large mixing bowl, whisk butter until softened. Whisk in sugar and salt until butter is pale and creamy.

  2. Beat egg and whisk in in 2 additions.

  3. Sift flour, wheat flour, almond, baking soda and baking powder, fold into butter.

  4. Knead mixture into a smooth dough and roll into small balls. Place dough on a parchment paper lined baking tray and place an almond in the center of each dough ball, slightly flattening the dough.

  5. Bake in a preheated oven of 170degC for 20mins until golden brown.
