Peppermint Meringue


[Ingredients]

  • 3 Large Egg Whites

  • 3/4 Cup Sugar

  • 1/2tsp Peppermint Essence

  • Red Gel-paste Food Colouring

[Steps]

  1. Preheat oven 80degc. Line baking tray with parchment paper.

  2. Place whites and sugar in a heatproof bowl set over a pan of simmering water. Stir gently until sugar is dissolved and mixture is warm to touch, abt 2-3mins.

  3. Whisk on medium-high speed until stiff peaks form. Mix in peppermint.

  4. Fit a pipping bag with a star tip. Using a small paintbrush, paint 2 -3 strips of colouring on the inside of the bag. Fill bag with meringue. Pipe out 3/4inch tall star shapes onto the prepared tray.

  5. Bake for 1hr 40mins until crisp but not brown. Turn off oven heat and leave meringues in the oven for 30mins, then transfer to wire rack to cool completely.
