[Ingredients]
35g softened butter
30g peanut butter + extra for spreading
30g brown sugar
30g egg white
40g cake flour
30g bread flour
15g almond powder
[Steps]
Whisk butter and peanut butter in a large mixing bowl until loosen. Whisk in sugar and continue to whisk until mixture turns pale.
Whisk in egg white in 2 additions.
Sift both flours and almond, and fold into mixture.
Transfer mixture into a piping bag fitted with a star tip. Pipe out cookies to the length of a thumb. Bake in a preheated oven of 170degC for 15-20mins.
When done, let cool completely. Spread peanut butter on one cookie and place another cookie over, forming sandwich cookies.
