[Ingredients]
1 egg white
15g sugar
30g almond powder
15g icing sugar + extra for dusting
60g almond
60g walnut
[Steps]
Roast nuts at 170-180degC for 5-10mins. Let cool then chop.
Whisk egg white until foamy, add in sugar and whisk until stiff peaks formed (meringue).
Sift almond powder and icing sugar, fold into meringue, followed by chopped nuts.
Using a spoon, scoop batter up onto a parchment paper lined baking tray. Dust icing sugar over and bake in a preheated oven of 160-170degC for 30mins.
