Homemade Lemon Curd


[Ingredients]

  • 2 eggs

  • 100g caster sugar

  • 4tbsp lemon juice

  • 35g unsalted butter - melted

  • Zest of 1 lemon

[Steps]

  1. Whisk eggs and sugar in a heatproof mixing bowl.

  2. Add in lemon juice and mix well.

  3. Place bowl over a pan of simmering water and whisk till mixture turns thick, fluffy and creamy.

  4. Stir in butter and lemon zest.
