[Ingredients]
2 eggs
100g caster sugar
4tbsp lemon juice
35g unsalted butter - melted
Zest of 1 lemon
[Steps]
Whisk eggs and sugar in a heatproof mixing bowl.
Add in lemon juice and mix well.
Place bowl over a pan of simmering water and whisk till mixture turns thick, fluffy and creamy.
Stir in butter and lemon zest.
