Walnut Rye Bread

[Ingredients]

  • 170g bread flour

  • 30g rye flour + extra for dusting

  • 3g instant yeast

  • 20g sugar

  • 2g salt

  • 30g egg

  • 100-105ml water

  • 30g butter

  • 70g walnut (chopped)

[Steps]

  1. Place flour, rye flour, salt and yeast in a large mixing bowl. Add in egg and water and knead into a dough.

  2. Place dough on worktop and knead in butter, followed by walnut.

  3. Knead until a smooth dough is form and shape it into a ball. Place dough into a large mixing bowl, cover with cling film and let proof for 40-45mins until doubled in size.

  4. Gently knead dough to allow air to escape. Divide dough into 3 portions and shape each dough into a ball. Cover with cling film and let proof for 15mins.

  5. Sprinkle some water over the dough, flip over the dough and dust it with rye flour.

  6. Place dough on baking tray, cover with cling film and let proof for 40mins.

  7. Bake in a preheated oven of 200degC for 15-17mins.
