Pine Cone Soft Pretzels

[A]

  • 1 1/2 Cups Warm Water

  • 1tsp Honey

  • 1 Packet Dry Yeast

  • 2 Cups All-purpose Flour

  • 2 1/2 Cups Bread Flour

  • 1tbsp Salt

  • 6tbsp Melted Butter

  • Olive Oil - for coating

[B]

  • 5 Cups Water

  • 1/3 Cup Baking Soda

[C]

  • Egg Yolk

  • 1tbsp Water

  • Pretzel Salt

[Steps]

  1. [A] Add all-purpose flour, 2 cups bread flour, butter, salt and yeast into a bowl. Knead well using a dough hook attachment. If dough is too sticky, add in another 1/2 cup bread flour. Knead for 5mins or until dough comes into a smooth ball.

  2. Lightly coat a large bowl with oil and place dough in. Cover with plastic wrap and let rise in a warm place for 1hr.

  3. Preheat oven 230degC.

  4. Invert dough out onto a clean worktop and roll it into a rectangle. Using a knife/pizza cutter, cut dough into squares and roll each square into a ball.

  5. [B] Bring water and soda to boil. Stir well until soda is dissolved. Blanch dough balls in for 30secs, then transfer to a baking tray.

  6. Transfer pretzels onto a parchment paper lined baking tray. Using a pair of kitchen shears, snip each ball starting from the very top.

  7. [C] Whisk yolk and water together, strain. Brush sparingly onto the tops of the pretzels and sprinkle pretzel salt over.

  8. Bake for 10-12mins until golden brown. Serve decorated with rosemary as the 'pine tree' branch.
