Matcha Red Bean Bun

[Ingredients]

  • 200g bread flour

  • 6g matcha powder

  • 35g sugar

  • 3g instant yeast

  • 2g salt

  • 30g softened butter

  • Half egg

  • 1tbsp milk

  • 110-115g water

  • 100-150g red bean paste

[Steps]

  1. Place flour, matcha, salt, sugar and yeast in a large mixing bowl, mix well. Mix in milk and egg until a soft dough is formed.

  2. Place dough on worktop and knead in butter, about 10mins until a smooth dough is form.

  3. Roll dough into a ball and place it in a large mixing bowl. Cover with cling film and let proof for 40mins.

  4. Gently knead to allow gas to escape. Divide into 8 portions and shape back into a ball, cover with cling film and let proof for 15mins.

  5. Wrap red bean into dough and place rolls in muffin tin or baking tray and let proof for 40mins.

  6. Bake in a preheated oven of 190degC for 15-18mins.
