Cranberry Pumpkin Bread


[Ingredients]

  • 1 (15oz) canned pumpkin

  • 1 cup vegetable oil

  • 2/3 cup water

  • 4 large eggs

  • 3 1/3 cups all-purpose flour

  • 3 cups sugar

  • 2tsp baking soda

  • 1tsp cinnamon

  • 1tsp nutmeg

  • 1tsp cloves

  • 1 cup chopped fresh or frozen cranberries

  • 1 cup raisins

  • 1/2 cup chopped walnuts

[Steps]

  1. Preheat oven 175degC. Grease 2 10inch loaf pans and dust with flour.

  2. In a bowl, add pumpkin, oil, water and eggs. Beat at medium speed until well combined.

  3. In another bowl, combine flour, sugar, baking soda, cinnamon, nutmeg and cloves. Gradually add to pumpkin mixture, beating until smooth.

  4. Stir in cranberries, raisins and walnuts. Spoon batter into pans and bake for 50 to 60mins or until an inserted skewer comes out clean.

  5. Let cool in pans for 10mins. Remove pans and cool on cooling racks.
