Club Sandwich


[Ingredients]

  • 6 slices white bread

  • 1 ready cooked chicken breast

  • Softened butter

  • Handful of salad leaves (mixture of watercress, spinach and arugula - with stalks removed) or iceberg lettuce leaves

  • 2 thinly sliced medium tomato

  • 1/4 thinly sliced medium onion

  • 4tbsp mayonnaise

  • 50g ready cooked crispy smoked bacon

  • 1 thinly sliced peeled avocado

[Steps]

  1. Toast bread lightly on both sides. Slice chicken breast as thinly as possible. Butter 4 toasted bread.

  2. Place a slice of buttered toast on a board and arrange a few greens on top. Add half the tomato slices and chopped onion. Season well.

  3. Spread 1tsp of mayo over the onion. Then sprinkle half the bacon over mayo. Place an unbuttered toast on it, followed by half the avocado and some greens. Season well and top with a buttered toast.

  4. Repeat the process again with the remaining ingredients.

  5. Cut sandwich into triangles using sawing movement. Do not press bread down.
