[Ingredients]
300g plain flour
30g caster sugar
1/2tsp ground cinnamon
1/2tsp salt
40g unsalted butter, cut into cubes
1tsp instant yeast
1 lightly beaten egg
125ml milk
40ml warm water
150g dark chocolate chips
[Chocolate Sauce]
1tbsp plain flour
1 1/2tsp cocoa powder
1tsp caster sugar
1tbsp water
[Glaze]
2tbsp caster sugar
2tbsp water
[Steps]
Bun: Place flour, sugar, cinnamon and salt in a bowl. Stir using a whisk.
Rub in butter until mixture resembles breadcrumbs. Add in yeast and stir.
Make a well in the center. Add in eggs and water, and mix into a soft dough.
Turn dough onto a lightly floured worktop and knead for 10mins until the dough is smooth and elastic.
Knead in chocolate chips. Smooth dough into a round ball and put it in a greased bowl. Cover with plastic wrap/damp cloth and let rest for 1hr until the dough has doubled in size.
Divide the dough into 15 portions and roll each portion into a ball.
Place the balls, almost touching, in a greased rectangular pan. (if using square pan, divide into 16 portions.)
Cover with plastic wrap/damp cloth and let rest for 30-45mins until dough has doubled in size.
Preheat oven 200degC.
Sauce: Sift flour and cocoa powder into a bowl. Stir in sugar.
Add in water and keep stirring using a spoon until a smooth thick paste is achieved.
Place sauce in a plastic bag and snip off the corner – a small hole will do!
When the dough has finish proofing, pipe lines on the bun continuously (see below).
Bake for 15-16mins or until golden brown.
Glaze: While the buns are baking, place sugar and water together in a saucepan. Heat over low fire and stir until the sugar dissolves.
Transfer baked buns to cooling rack and brush tops with glaze. Serve warm.
