Tomato Soup

[Ingredients]

  • 300g large ripe vine tomatoes

  • 2 deseeded and roughly chopped red capsicum

  • 75g dried breadcrumbs

  • 110ml extra virgin olive oil

  • 3 cloves peeled garlic

[Garnish]

  • 1 peeled and chopped hard boiled egg

  • 2 slices ham cut into strips

[Steps]

  1. Pour boiling water over tomatoes and wait for 1min. Drain and remove skin.

  2. Place tomatoes and the rest of the ingredients in a bowl and season.

  3. Whiz ingredients into a thick creamy puree.

  4. Cover the bowl with plastic wrap and chill in the fridge overnight.

  5. Serve in chilled soup bowls with garnishes.
