[Ingredients]
300g large ripe vine tomatoes
2 deseeded and roughly chopped red capsicum
75g dried breadcrumbs
110ml extra virgin olive oil
3 cloves peeled garlic
[Garnish]
1 peeled and chopped hard boiled egg
2 slices ham cut into strips
[Steps]
Pour boiling water over tomatoes and wait for 1min. Drain and remove skin.
Place tomatoes and the rest of the ingredients in a bowl and season.
Whiz ingredients into a thick creamy puree.
Cover the bowl with plastic wrap and chill in the fridge overnight.
Serve in chilled soup bowls with garnishes.
