Summer Green Soup


[Ingredients]

  • 10 discs Aunt Bessie's Homestyle frozen mashed potato

  • 110g mixed greens (watercress, spinach and arugula)

  • 1 washed trimmed and sliced medium leek

  • 4 to 6 spring onion - snipped into three pieces

  • 425ml hot stock made from Marigold bouillon powder

  • 150ml milk

  • 1tsp butter

  • Watercress leaves for garnishing

[Steps]

  1. In a saucepan, add sliced leek and spring onion. Stir around, add some salt. Cook covered over low heat for 5mins.

  2. Add potato, stock and milk. Cook till simmering.

  3. Stir well and simmer covered for 20mins.

  4. Turn off heat. Add greens and puree soup.

  5. Adjust seasoning and served garnish with watercress.
