Macaroni Salad


[Ingredients]

  • 8oz elbow pasta (aka macaroni)

  • 4 sliced bacon

  • 2 large tomatoes - diced

  • 4tbsp reduced-fat mayonnaise

  • Salt and pepper

  • 2 cups baby spinach

[Steps]

  1. In a large skillet, cook bacon over medium-low heat till crispy on both sides.

  2. In a large pot of boiling salted water, cook pasta till al dente.

  3. Combine tomatoes, mayonnaise and pepper in a mixing bowl, mix well.

  4. Drain pasta and rinse under water to cool. Combine with tomatoes and spinach, mix well.

  5. Toss in bacon just before serving.
