[Ingredients]
8oz elbow pasta (aka macaroni)
4 sliced bacon
2 large tomatoes - diced
4tbsp reduced-fat mayonnaise
Salt and pepper
2 cups baby spinach
[Steps]
In a large skillet, cook bacon over medium-low heat till crispy on both sides.
In a large pot of boiling salted water, cook pasta till al dente.
Combine tomatoes, mayonnaise and pepper in a mixing bowl, mix well.
Drain pasta and rinse under water to cool. Combine with tomatoes and spinach, mix well.
Toss in bacon just before serving.
