[Ingredients]
150ml water
115g caster sugar
Zest and juice of 2 limes
400ml coconut milk
Toasted coconut shavings for decorations
[Steps]
Put water in a saucepan. Add sugar in and bring to boil, stirring constantly until the sugar has dissolved.
Remove from heat and leave to cool then chill.
Put lime zest and lime juice in a saucepan and add in coconut milk.
Pour mixture into a container and freeze for 5 to 6hrs until firm, beating twice using a fork to break up ice crystals.
Scoop into dishes and decorate with coconut shavings.
