Watermelon Granita

[Ingredients]

  • 150g caster sugar

  • 150ml water

  • 1.75kg red watermelon

  • Zest and juice of 2 limes

  • Lime wedges for decoration

[Steps]

  1. Bring sugar and water to boil, stirring until sugar has dissolved. Leave to cool then chill.

  2. Cut watermelon flesh into smaller pieces if needed. Puree flesh in a food processor.

  3. Strain puree into a container. Discard seeds. Pour in chilled syrup, lime zest and juice and mix well.

  4. Cover and freeze for 2hrs or until the sides start to become mushy.

  5. Using a fork, break up the ice crystals and mash mixture finely. Freeze again for 2hrs, beating every 30mins until the ice becomes fine, even crystals.

  6. Scoop into dishes and serve with lime wedges.
