Orange Tequila Granita

[Ingredients]

  • 115g caster sugar

  • 300ml water

  • 6 well scrubbed orange

  • 6tbsp tequila

  • Orange and lime wedges for decoration

[Steps]

  1. Place sugar and water in a saucepan. Using a peeler, pare oranges thinly and add rind to pan. Bring to boil, stirring to dissolve the sugar. Pour syrup into a bowl, leave to cool then chill.

  2. Strain syrup into a container with depth of mixture max of 2.5cm. Cover and freeze for 2hrs or until the sides start to become mushy.

  3. Using a fork, break up the ice crystals and mash mixture finely. Freeze again for 2hrs, beating every 30mins until the ice becomes fine, even crystals.

  4. Scoop into dishes and serve with orange and lime wedges.
