Coffee Granita

[Ingredients]

  • 5tbsp good quality coffee powder

  • 1 litre boiling water

  • 150g caster sugar,

  • Coffee beans shaped chocolate for decoration

[Steps]

  1. Spoon coffee into a jug and pour boiling water over. Leave to stand for 5mins.

  2. Strain coffee and pour into a container, depth of mixture max of 2.5cm.

  3. Add sugar and stir until it has dissolved completely. Leave mixture to cool.

  4. Cover and freeze for 2hrs or until the sides start to become mushy.

  5. Using a fork, break up the ice crystals and mash mixture finely. Freeze again for 2hrs, beating every 30mins until the ice becomes fine, even crystals.

  6. Spoon granita into glass dishes and decorate with chocolate coffee beans.
