Squash Fried Rice

[Ingredients]

  • 1 spaghetti squash

  • 2 cloves of garlic, diced

  • 2 large eggs, whisked

  • 1tbsp peanut/olive oil

  • 3/4 cup sliced carrots

  • 1/2 cup spring onion, chopped

  • 1tbsp fish sauce

  • Sriracha sauce

[Steps]

  1. Poke several holes in the squash and microwave 15mins until completely soft. Or, bake in the oven at 190degC for 45-55mins until cooked thru.

  2. Allow squash to cool a little. Slice half, remove seeds and scoop out 'spaghetti'. Slice sqaush into rice-like pieces.

  3. Heat oil, garlic and carrots over medium-high heat for a few mins until carrots soften. Add in squash and cook for 5mins.

  4. Quickly stir in eggs with a spatula and mix well. They will scramble into the squash.

  5. Add in fish sauce, siriracha and half the spring onions. Mix well.

  6. Serve topped with spring onions.
