Spaghetti Squash Baked Eggs


[Ingredients]

  • 1 spaghetti squash

  • 1/4 cup grated parmesan cheese

  • 1/4 cup olive oil

  • Garlic salt

  • Cracked black pepper

  • Smoked paprika

  • 4oz artisan salami, diced

  • 8 eggs

  • Spring onion, chopped

[Steps]

  1. Poke several holes in the squash and microwave 15mins until completely soft. Or, bake in the oven at 190degC for 45-55mins until cooked thru.

  2. Allow squash to cool a little. Slice half, remove seeds and scoop out 'spaghetti'. Toss it with olive oil, salt, pepper, paprika, parmesan and salami.

  3. Preheat oven 190degC. Spray 4 large ramekins/bowls with cooking spray.

  4. Add 3/4 cup squash mixture into each ramekin/bowl and gently crack 2 eggs over. Place ramekins/bowls on a baking tray and bake for 20-25mins. Topped with spring onions and serve.
