[Ingredients]
2 large eggs
1tbsp light unsweetened coconut milk
1 cup egg white
1/4tsp honey/maple syrup
1/4 cup unsweetened shredded coconut
1/8tsp fine sea salt
Butter/unrefined coconut oil - for coating pan and bread
Toasted bread of your choice
Fresh fruits of your choice (shown: strawberries, blackberries and banana)
Toasted coconut flakes
[Steps]
Whisk eggs, coconut milk, honey/maple, shredded coconut and salt together.
Heat a non-stick pan over medium-low heat. Add egg mixture in and cook slowly, stirring frequently to get creamy scrambled eggs.
Toast bread and spread coconut oil/butter over. Serve with eggs on the top, garnished with coconut flakes and a side of fruits.
