[Ingredients]
1 small orange - peeled and segment
1tsp balsamic vinegar
1tsp extra virgin olive oil
1/2tsp honey
Salt and pepper
2 cups fresh arugula
3tbsp crumbled gorgonzola cheese
2-3 red onion slices
[Steps]
Squeeze juice of 2 orange segments into a bowl and whisk in vinegar, oil, honey, salt and pepper.
Cut remaining segments into bite sizes.
Place greens on a serving plate, topped with orange, onion and cheese. Drizzle vinaigrette over.
